Apples poached in a medley of spices and aromatics that provide complex, fresh and berry-like flavor undertones to this cheesecake. The poaching liquid is turned into a gelee layer, and the vibrantly red poached apples placed on top completes the cake in taste, texture and design.

Chocolate-Orange: a pairing we have always been partial to at the Pastryarchy kitchen. This cake celebrates that flavour with an almond sponge, house-made almond praline, spiced orange gelée covered in orange-zested dark chocolate mousse.
